2 lb. of Fresh Fish of your Preference (white fish)
1 Medium Red Onion
1 Small Red Pepper
1 Small Yellow Pepper
1 Small Green Pepper1 Small Bunch of Cilantro
1 Cup of Lemon Juice
2 Cups of Coconut Milk
Salt and Pepper to Taste
Method
Dice the fish in medium size cubes and add ยพ of cup of lemon juice and enough water to cover it; let it rest for 15 minutes.
Add another ยผ of lemon juice to the coconut milk. Dice the onion and the peppers into small cubes and set aside.
Chop finely the cilantro leafs and add to the mix of coconut milk with the rest of the vegetables.
After 15 minutes, drain the liquid of the fish and add the coconut milk and let it rest for 5 more minutes into the fridge to allow the fish to absorb all the flavors in the coconut milk mixture.
You can garnish with deep fried green plantain, sweet potato, yucca, corn chips or the garnish of your preference.
